That was one of the knocks on Bryant, his route running was questionable, and people wondered if he could get separation in the NFL.
I think that (purely based on what I have read and seen) Baldwin can overcome these issues just as Bryant did, and other receivers before them. Baldwin is a very physical guy and can get off the jam, when you have a 6'5 230lb frame thats alot of player to throw around. Momass and Robiskie both have ball adjustment issues which I believe is one of Baldwins strong suits, and with that size and leaping ability, he's a hard target to miss.
He is quite frankly a Vincent Jackson clone with better hands and hops
